HAS University of applied science, in particular the professorship Design Methods in Food has been researching 3D food printing for over 3 years.
In this presentation the outcome will be presented of the current research, which focusses on building viable 3D food printing business cases. Two business cases are being researched: the first one is using 3D food printing of everyday food for (elderly) people with chewing and swallowing problems, and the second one is a startup enterprise that provides business-to-business services for events and catering.
The research is conducted together with two partner companies: byFlow and De Verspillingsfabriek.

Food Innovation and meeting consumer needs drive me.
Why should the delegate attend your presentation?
In the area of 3D printing a lot of research is done on the technology, but not on the business case. In this presentation the delegate will receive first hand and new insights on 3D food printing business cases.
What emerging technologies/trends do you see as having the greatest potential in the short and long run?
Tough question, potential is for me the value of an Innovation. Sometimes the biggest influences do not translate in potential, but will alter how we look at food and the diet we have. The trend towards vegetable consumption or less animal products consumption is from an impact point of view huge.
What kind of impact do you expect them to have?
The impact is that it will change every diet/meal we currently consume.
What are the barriers that might stand in the way?
Animal products have benefits as well and they are sometimes too good not to be eaten.
