Pieter Debrauwer, Project Manager at TNO, presents during the 3D Food Printing Conference: “Performance: Personalised Food using 3D printing for the nutrition of elderly consumers”.
Age-related diseases and disorders such as mastication and swallowing problems can lead to loss of appetite and malnutrition. The performance system develops personalized meals, which via 3D printing can have a tailored hardness and nutritional content. Resulting in a nice looking meal which is appealing to the elderly consumer, opposed to the “baby food” like meals people with mastication problems receive currently. For this system developments in ICT, 3D printing, materials and packaging have been combined resulting in a complete system from ordering in a nursing home to production in a centralized location to reheating and serving to the consumer.
About Pieter Debrauwer
Pieter Debrauwer studied aerospace engineering in Delft and started working on flow mechanics in different fields from lab-on-chip to 3D printing. For the last 5 years he has been working as a project manager and the last 4 years specifically in the field of 3D food printing. The projects vary from European projects like Performance (personalized food) and Enthalpy (energy efficient dairy processing) to direct business projects on knowledge transfer as well as development of concepts for companies.
